We’ve been having quite a few overnight house guests lately, with moving to Central Oregon, a few hours away from my family, and then with having a baby, there are plenty of reasons for folks to come our way and stay awhile. One of my favorite things about overnighters is making a big breakfast in the morning. I just love making breakfasts!

There are things I know, things I can count on. They comfort me in a time when there is a lot of uncertainty (Becoming a mom! Owning a business! Politics!) And while I’ve gotten pretty comfortable with uncertainty, I have a long way to go before The Great Unknown and I are best buds. That’s the catch 22, isn’t it? Nothing in life is certain, but we long for some stability and routine in our lives. When I make this lasagna, I know, I just know that it will be good. I know that it will make a sh*t ton of food, and I know that the results will be well worth the effort.

My mom used to make oven fried chicken a lot. I remember coming home on Sundays from church, and we were likely to have one of three dishes: Pot roast, meatloaf, or oven fried chicken. Mashed potatoes on the side, no matter what. When I was little, my parents didn’t cook many dishes that were outside of those classic American staples, but they cooked each one of them well. I loved my Mom’s oven fried chicken, but I tried to make it recently and I felt like it could use a few modern improvements (no offense, Mom, I love you!)

I remember when I was in high school and we had family dinners at my mom’s house on the weekend, we would sometimes eat in the dinning room and have courses. There would be a little appetizer, a salad, and a main course. Dessert was usually popcorn in front of the TV, or bowls of ice cream (mom didn’t bake much after grade school, aside from the occasional banana bread or gingersnaps). One of the things about the food that has stuck with me is my mom’s salads.

I don’t need a gallon of sun tea. But I want some amount of sun tea to be in my fridge at all times. I love trying different flavors, blends and teas as sun tea too. They way sun tea works, is that you put the tea in a glass container and let the sun work it’s magic on it. The slow, steady rise in temperature from the sun creates a brew that is so delicious, and smooth. It’s different then just regular iced tea!
